No Fry Fries

This recipe can be made from a number of different root veggies so choose one of the following that best suits your taste buds: 

8 Carrots

3-4 Sweet Potatoes (depending on size)

8 Parsnips

3-4 Jicama (depending on size)

Ingredients:

Root veggie choice from above

3 Tbsp. Olive Oil

Sea Salt & Fresh Ground Black Pepper

1 Tbsp. Dried Tarragon or other dried herb of your choosing

Instructions:

Preheat oven to 450 degrees

Slice root veggies lengthwise into ¼ thick “fries”

Toss “fries” in a bowl with olive oil, salt & pepper (to taste) and dried tarragon or herb(s) of your choosing.

Lay “fries” flat on a baking sheet and roast in the oven for 20 minutes or until crisp-tender.

Serve with DofH DIY Paleo Ketchup and make sure you get some before everyone gobbles them up!
