Hubby's Favorite - Friday Night Chicken


  • 1 Organic Chicken (approx. 2-3 lbs.)
  • 1 Organic Lemon
  • Olive Oil
  • Coarse Ground Celtic Sea Salt
  • Fresh Ground Pepper
  • Dried Thyme


  • Pre-heat oven to 425 degrees
  • Remove any innards and rinse the chicken
  • Pat dry with a paper towel and place in a roasting pan
  • Insert lemon (cut into quarters) into the chicken cavity
  • Rub chicken all over with olive oil (there may be some extra in the bottom of the roasting pan well)
  • Sprinkle liberally with salt, pepper and thyme
  • Place in the oven for 50 minutes – 1 hour (depending on size)
  • Let stand for 10 minutes out of oven before carving

Serve with plenty of veggies!
