Honeycrisp Skillet Cake (Grain Free)


  • 1 tablespoon salted grass fed butter
  • 3 Honeycrisp apples, peeled and sliced
  • 2 tablespoons grade B maple syrup (local if possible)
  • ½ teaspoon ground cinnamon
  • ½ cup raisins or chopped dates (seedless)
  • ¾ cup almond flour
  • ⅓ coconut sugar
  • ⅛ teaspoon good salt (Fine Celtic or Himalayan Sea Salt)
  • 1 ½ cups coconut milk or organic full fat cow’s milk
  • 2 pastured eggs + 1 pastured egg white
  • 2 teaspoons great rum


Preheat the oven to 375 degrees

Prepare cake mixture…

  • In a large bowl combine almond flour, coconut sugar and salt
  • Then add coconut milk, eggs + egg white, and rum
  • Blend until smooth

Prepare apple mixture…

  • Melt the butter 10-inch cast iron skillet over medium-high heat.
  • Add the apples ansd cook in the butter until slightly browned and softened – 4-5 minutes
  • Add the maple syrup, raisins and cinnamon to your apples and continue to brown for up to 2 minutes more
  • Remove apple mixture from the skillet into a separate bowl and set aside

Put it all together…

  • Pour cake mixture in skillet pan
  • Add apple mixture evenly to cake mixture
  • Bake for 35-40 minutes or until golden brown

Serve each warm slice with a scoop of organic vanilla ice cream and a sprinkling of more cinnamon – SO BEAUTIFUL!!!
