Cauliflower Mashed "Potatoes"


  • 1 large head cauliflower
  • 5 large cloves garlic
  • A Few pinches of Kosher Salt
  • 2 tablespoons grass fed butter
  • ¼ teaspoon freshly ground nutmeg
  • Freshly ground black pepper to taste
  • Fresh Chives (optional)
  • Truffle Oil (optional)


  • Bring a steamer pot with a few inches of water in the bottom to boil
  • While water is heating - remove greens from cauliflower (you can set aside to add to a veggie stock)
  • Roughly chop the cauliflower into large pieces (preparing to steam)
  • Remove skin from garlic
  • Once water is boiling add cauliflower pieces and garlic to steamer insert and steam for 10-15 minutes or until cauliflower is soft
  • Remove from steamer pot and place in a Cuisinart.
  • Add remaining ingredients (except chives and/or truffle oil) and blend until smooth (or lumpy if that is how you prefer the consistency)
  • Sprinkle herbs and oil for final effect and aroma
